Watermelon seeds don’t have to go to waste. Not only can you regrow them for another batch of tasty fruit – see our previous blog here – but they can also form part of a tasty, healthy meal. Watermelon seeds are rich in proteins, essential vitamins and minerals and, as they contain healthy fatty acids, can help if you are on a diet.

C & M Watermelon Imports Ltd are one of the leading watermelon suppliers to the UK. Here we identify six of the best watermelon seed recipes, which also appear on The Enlightened Mindset and the Upgrade My Food websites. And the good news is – they are all extremely easy to make!

1.Roasted or Toasted Watermelon Seeds

Ingredients – Oil (olive, coconut, etc.); seasoning (salt, pepper, garlic powder, etc.); baking sheet.

Method – Preheat the oven to 180C (350F). Spread the watermelon seeds on the baking sheet, then drizzle the oil over the seeds and season. Bake the seeds for 15-20 minutes, stirring occasionally. Remove from the oven and enjoy.

2. Watermelon Seed Smoothie

Ingredients – 1 cupful of watermelon seeds; 1 banana; 1 cup of almond milk; 1 tablespoon of honey.

Method – Add all ingredients into a blender, and blend until smooth. Then simply pour into a glass and enjoy your drink – which will be both tasty and nutritious.

3. Watermelon Seed Salad

Ingredients – Salad greens of your choice; ¼ cupful watermelon seeds; salad dressing.

Method – Simply toss together the salad greens and watermelon seeds, drizzle with the salad dressing and enjoy.

4.Trail Mix with Watermelon Seeds

Ingredients – 1 cupful raw nuts (almonds, walnuts, cashews, etc.); ½ cup dried fruit (raisins, cranberries, etc.); ¼ cup watermelon seeds; ¼ teaspoon sea salt.

Method – Mix together all the ingredients in a bowl. Store them in an airtight container before you eat them. This trail mix is ideal for hikers, campers or anyone who wants to eat a tasty snack ‘on the go’.

5. Stir-Fried Watermelon Seeds

Ingredients – 1 cup watermelon seeds; 1 tablespoon oil (olive, coconut, etc.); vegetables of your choice (onion, pepper, mushrooms, etc.); seasonings (salt, pepper, garlic powder, etc.)

Method – Heat oil in a skillet or frying pan over a medium heat. Add the watermelon seeds and cook for 2-3 minutes. Add the vegetables and seasoning and cook for a further 5-7 minutes, stirring occasionally. Serve and enjoy!

6. Watermelon Seed Bars

Ingredients – 1 cup watermelon seeds; ½ cup sugar; ½ cup water; coconut oil (optional – to grease the mould for easy removal).

Method – roast the seeds in a medium skillet or frying pan on a medium heat or flame. Keep stirring. When the seeds are reddish in colour, after around seven minutes, our them into a bowl. Add the water and the sugar until you see a syrup form, then add the seeds back into the pan. Stir to ensure the seeds are all coated with the syrup. Brush the coconut oil in a pan and keep it ready – then pour the sugar-coated seeds into the bowl and press into shape. Let the mixture cool before you cut it into shape – then serve.
