Watermelon Salsa 

Ingredients: watermelon, red bell peppers, onions, jalapeno, herbs, lime, and coriander leaves

Directions: In a bowl, take a cup full of nicely diced watermelon with its seeds removed. Add half a cup of chopped bell pepper and onions. Add a few jalapenos, herbs, and lime juice and mix well. Garnish this with a quarter of finely chopped coriander leaves and voila! A refreshing salsa is ready to eat!

In our opinion, it’s just the right mix of sweet and savoury, it has however much kick you’d like from the jalapeno, the herbs and lime juice give it the perfect light and fresh taste of summer, and — the best part! — the fresh watermelon makes every bite extra deliciously juicy and refreshing!

Watermelon Salad 

Ingredients: watermelon, cucumber, mint leaves, olive oil, feta, and balsamic glaze

Directions: Chop 180g watermelon and ½ cucumber into chunks and tip into a bowl with the leaves from ½ bunch mint (reserve a few for garnish) and drizzle with 1 tbsp olive oil. Season and pile onto a serving plate. Crumble over 100g feta, and the remaining mint leaves, then drizzle with 1 tbsp balsamic glaze just before serving.

Serve this watermelon, feta, and mint salad as a side dish at a barbecue or picnic. Bursting with fresh, summer flavours, it’s also two of your five-a-day!

Watermelon Smoothie

Ingredients: watermelon, Greek yoghurt (or low-fat vanilla), and ice cubes.
Directions: Dice half a cup of watermelon. Add it to a blender with half a cup of Greek yoghurt and half a cup of ice cubes. Blend this all together until smooth and have a fresh watermelon smoothie to enjoy!

Bonus Smoothie Additions: Spruce up your watermelon smoothie with any of the below:

  • Mint. SO, REFRESHING! Making this watermelon mint smoothie takes the recipe from “I’m at a beach and loving life” to “I’m at a beach resort and never leaving.”
  • More Fruits. Strawberry makes for a good addition to your already red smoothie.
  • Lime. For a watermelon mojito smoothie, add both mint and lime.
